German Red Wine and Chocolate Cake

- 6 medium eggs
- 1 cup sugar
- 1 tbsp vanilla sugar
- 1 & 1/4 cups butter, unsalted & melted
- 1 & 3/4 cups flour
- 1 tsp baking powder, heaping
- 1/4 cup cocoa powder
- pinch salt
- 1 tsp cardamom powder
- 1 tsp cinnamon powder
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 2/3 cup red wine
- 1/2 cup chocolate chips
- powdered sugar, for dusting (optional)
Preheat oven to 180-degrees C (350-degrees F).
Grease and flour bundt cake pan
In a medium bowl, sift and combine flour, cocoa powder, salt, cardamom powder, cinnamon powder, nutmeg, cloves and baking powder. Combine thoroughly. Set aside. In another medium to large bowl, combine eggs, sugar and vanilla sugar. Use a hand mixer to combine.
Add melted butter and continue mixing.
Add the dry ingredients and the red wine alternately, in batches while mixing continuously.
Add chocolate chips. Use a spatula
or wooden spoon
Pour cake mixture into greased and floured bundt cake pan
Shake pan gently and place plan in the lower part of the oven for 55 to 60 mins.
Set aside to cool down.
Remove cake from pan and dust with powdered sugar.
